Watch them in action and see the recipes here.<\/p>\n<p><iframe src=\"https:\/\/www.youtube.com\/embed\/SSNXPe4EUQE\" width=\"560\" height=\"215\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<div id=\"WRchTxt0-15za\" class=\"s4\" data-reactid=\".0.$SITE_ROOT.$desktop_siteRoot.$PAGES_CONTAINER.1.1.$SITE_PAGES.$cugz.1.$WRchTxt0-15za\">\n<h3 class=\"font_7\"><span class=\"color_20\">Conchiglie with broccoli and anchovies<\/span><\/h3>\n<p class=\"font_7\"><span class=\"color_20\">Serves 4<\/span><\/p>\n<p class=\"font_8\"><span class=\"color_19\">400g Conchiglie Pasta<\/span><\/p>\n<p class=\"font_8\"><span class=\"color_19\">800g Tenderstem broccoli<br \/>\n2 cloves garlic, finely chopped<br \/>\n1 red chilli<\/span><\/p>\n<p class=\"font_8\"><span class=\"color_19\">4 anchovies fillets<br \/>\n150g pecorino cheese, grated<br \/>\n2 TBSP extra virgin olive oil<br \/>\nSalt and pepper to taste<\/span><\/p>\n<p class=\"font_8\"><span class=\"color_19\">1. Boil water and cook broccoli tenderstems for 4 minutes, drain keeping the water for later, cut tips from stems, blend the stems with an immersion mixer, set aside.<\/span><\/p>\n<p>2. In a large skillet, pour 2 tbs olive oil, when hot add garlic, anchovies and chillies and cook until soft and golden.<\/p>\n<p class=\"font_8\"><span class=\"color_19\">3. Add the crushed broccoli stems, add a splash of the cooking water and simmer for a 2 minutes or until all flavours combined. Salt and pepper to taste.<\/span><\/p>\n<p class=\"font_8\"><span class=\"color_19\">4. Cook pasta until \u201cal dente\u201d in salted water, drain and then stir it in the sauce and cook for a further minute on medium heat.<\/span><\/p>\n<p>5. Turn of the heat, add the broccoli florets, sprinkle with pecorino and finally serve drizzling with good Extra virgin olive oil.<\/p>\n<\/div>\n<div id=\"WRchTxt1-zp\" class=\"s4\" data-reactid=\".0.$SITE_ROOT.$desktop_siteRoot.$PAGES_CONTAINER.1.1.$SITE_PAGES.$cugz.1.$WRchTxt1-zp\">\n<h3 class=\"font_7\">Spaghetti with ostrich Bolognese<\/h3>\n<p class=\"font_7\">Serves 4<\/p>\n<p class=\"font_7\"><span class=\"color_19\">400g spaghetti pasta<br \/>\n1 onion, finely chopped<br \/>\n2 carrot, finely chopped<br \/>\n2 celery stalks, finely chopped<br \/>\n50ml red wine<br \/>\n2 TBSP cooking oil<br \/>\n400g minced ostrich<br \/>\n600g tomato passata<br \/>\n150g Parmigiano Reggiano, grated<br \/>\nSalt and pepper to taste<\/span><\/p>\n<p>1. In a large saucepan add 2 tablespoons of olive oil on a and fry until soft onions, celery and carrots on a medium heat<\/p>\n<p class=\"font_7\"><span class=\"color_19\">2. Now increase the heat, pour in the ostrich mince and cook until browned.<br \/>\n<\/span><\/p>\n<p class=\"font_7\"><span class=\"color_19\">3. Pour in the red wine and cook until evaporated.<\/span><\/p>\n<p class=\"font_7\"><span class=\"color_19\">4. Add tomato passata, reduce heat, cover and let simmer for at least 1 hour, season to taste.<\/span><\/p>\n<p class=\"font_7\"><span class=\"color_19\">5. Cook pasta until \u201cal dente\u201d in salted water, drain and then stir it in the sauce.<\/span><\/p>\n<p class=\"font_7\"><span class=\"color_19\">6.
